Microwave Kettle Corn

2 (3 1/2 oz.) pkg. microwave popcorn (about 3/4 cup kernels if doing air popped)
3 Tbsp. butter (I used margarine)
3 Tbsp. water
1 cup sugar


1. Prepare the popcorn in a large bowl.
2. Melt butter alone or with the water in the microwave
3. Add sugar and stir
4. Bring to a boil and boil for three minutes
5. Remove from microwave and immediately pour over popcorn.
6. Make sure the mixture is well mixed into the popcorn
Note: The popcorn will be sticky at first so let it sit and harden. It will be crunchy not sticky after hardening.

*I love this recipe. It tastes just like the bag kettle corn. It's super sweet and yummy. In fact I think I like it better than Caramel Popcorn...*

Chicken and Vegetable Stir Fry

Ingredients:
1 chicken breast-cut up into bite size pieces
3 T Soy Sauce
1/4 C flour
2 T Sugar
1/2 tsp Ginger
1/8 tsp Garlic-Powdered
2 T Vegetable Oil
1 Carrot Sliced
1 Celery Stock sliced
1/4 Onion sliced
1 mushroom sliced
1 1/2 C Chicken Broth
1 T corn starch
1/4 tsp. Black Pepper

Directions:
1. Combine chicken and soy sauce in a bowl and let sit for 15 minutes to Marinate
2. Combine, flour, sugar, ginger, and garlic powder in pie plate or bowl. Drain chicken but save the marinade (Soy sauce.) Roll chicken in flour mixture
3. Heat oil in a large pan or wok on high heat. Add chicken; stir fry 3-4 minutes or until center is no longer pink.
4. Add vegetables and stir fry for 3 minutes or until crisp and tender
5. Whisk marinade (soy sauce), chicken broth, corn starch and black pepper in a small bowl; add to chicken mixture in pot. Cook and stir until sauce boils and thickens
6. Serve with rice

Pizza Puffs

Ingredients:
2 tubes refrigerated biscuits of crescent rolls
1 15 oz. can Pizza Sauce (or you could make you're own)
1 C Mozzarella Cheese shredded cheese
1 3 1/2 oz. pkg Sliced Pepperoni

Directions:
1. Unroll the dough and separate it into rounds/triangles
2. Place 10 rounds/8 triangles on a lightly greased cookie sheet
3. Layer each with 1 T pizza sauce, a sprinkle of shredded cheese and two slices of pepperoni
4. Cover each of them with another round/triangle pinch the edges together or pressing with a fork to seal
5. Bake at 375 degrees for 11-13 minutes

*I actually made this recipe in Middle School but my Foods teacher had the recipe so I stole it from her. This recipe is simple and good. It's almost as good as pizza but I wouldn't use it for a real meal.*

Microwave Caramel Popcorn

Popcorn:
1/2 cup not popped
Pop the popcorn and put it in a double layered paper bag

Caramel:
1/2 C Brown Sugar
1/4 C Karo Syrup
1/2 C Margarine
1/4 tsp. Salt
1/4 tsp. Baking Soda

Directions:
1. Place Caramel ingredients in glass bowl and microwave on high until mixture boils (approx. 2 minutes)
2. Stir, place back in microwave and boil for 1 more minute
3. Remove from microwave and stir in baking soda until mixture is light and foamy, then immediately pour over popped popcorn in paper bag, shake thoroughly
4. Put in microwave and microwave on high for 1 minute
5. Remove and shake again
6. Place back in microwave and cook for 1 more minute
7. Remove from microwave and shake thoroughly
8. Pour popcorn onto lightly greased cookie sheet
9. Let cool
10. Popcorn will harden as it cools

*This recipe is really good. When we made it in foods two of us in my group had braces and we ate it anyway. If you don't follow the directions carefully the popcorn won't harden. Just warning you.*
 

Sliced Baked Potatoes

Ingredients: 
4 medium potatoes-about the same size
1 tsp salt
2-3 T margarine-melted
2-3 T fresh herbs-chopped or 2-3 tsp dried herbs
4 T Grated Cheddar Cheese
1 1/2 T Parmesan Cheese

Directions:
1. Peel potatoes if wanted, otherwise just rinse and pat dry
2. Cut potatoes into thin slices without cutting all the way through.*
3. Place potatoes in Microwave Safe dish or pan. Sprinkle with melted margarine and herbs
4. Microwave on high for 10 minutes, rearranging potatoes after 5 minutes
5. Let rest for 5 minutes
6. Sprinkle with grated cheese and Parmesan cheese
7. Microwave for another 4-6 minutes on high power until cheese is melted
8. Served potatoes as a side dish or as a main dish with just a salad

*In foods when we cut the potatoes, we put it in a spoon and then cut them. The spoon prevents the knife from cutting all the way through the potato. My foods teacher got me hooked on chives this way. Its so good and is filling.*

Won Ton Chicken Salad

Salad:
1/2 head of lettuce (cut it or shred it)
1 chicken breast-boiled and shredded or cubed and sauteed
2 green onions chopped
1/2 pkg almonds or 1 cup
1/4 pkg. won tons-fried

Arrange ingredients in the order listed. Do not mix ingredients add dressing before serving.

Dressing:
2 T Sugar dissolved in 1 T water
1 1/2 T Vinegar
1/2 tsp. Salt
1/4 tsp Pepper
2 T Peanut Oil

Chill before serving. Pour over salad and toss before serving

It's fast, easy and could easily make a great side dish or main dish depending on what you need it for. You can omit the almonds and it still tastes just as good. It's really tasty and very colorful.*

Wilton Butter Cream Icing

The Wilton Butter Cream Icing is the colored frosting and Yes I decorated this...

Our Buttercream Icing recipe is perfect for spreading or decorating. Follow our instructions to make it the ideal consistency you need.

Ingredients:

  • 1/2 cup solid vegetable shortening
  • 1/2 cup (1 stick) butter or margarine softened
  • 1 teaspoon clear vanilla extract
  • 4 cups sifted confectioners' sugar (approximately 1 lb.)
  • 2 tablespoons milk

Makes:

About 3 cups of icing.

Instructions:

step 1

In large bowl, cream shortening and butter with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use.

step 2

For best results, keep icing bowl in refrigerator when not in use. Refrigerated in an airtight container, this icing can be stored 2 weeks. Rewhip before using.

step 3

For thin (spreading) consistency icing, add 2 tablespoons light corn syrup, water or milk.

step 4

For Pure White Icing (stiff consistency), omit butter; substitute an additional 1/2 cup shortening for butter and add 1/2 teaspoon No-Color Butter Flavor. Add up to 4 tablespoons light corn syrup, water or milk to thin for icing cakes.

Arugula Pizza



For Crust you will need:
1 Tablespoon yeast
1 Cup of Warm (105-115 Degrees) Water
2 Tablespoons Olive Oil
1 Tablespoon Honey
¼ Teaspoon Salt
3-4 cups of Flour

Preheat oven to 450 degrees
1. Mix the yeast and water in a small bowl, cover, and let stand until foamy 5-10 min.
2. Mix honey, oil, and salt and yeast mixture in large mixing bowl
3. Mix 3 cups flour in by hand
4. Knead the dough on a floured surface and if needed more flour into it until the dough is moderately stiff and somewhat firm to the touch
5. Grease pizza pan with oil and roll out dough on a floured surface
6. Stretch the dough to fill the pans
7.  Let rise and it will not rise very much

For the Toppings you will need:
Baby Arugula
Olive Oil
Mozzarella Cheese
Tomatoes diced or cherry tomatoes halved
Kosher Salt
Dash of Pepper

8. Put the cheese on the pizza
9. Bake on the lowest rack in the oven for 12-15 minutes or until crust is brown on the bottom and cheese is melted
10. Remove from oven and immediately pile on Arugula and top with tomatoes
11. Drizzle a small amount of Olive Oil over the pizza
12. Season lightly with the Salt and Pepper

Serve Immediately

Graham Crackers and Frosting

Graham Crackers 
Frosting (Any flavor really will do)
Put frosting on graham cracker and put a top on. Spreading with a knife works just fine.
*This is really easy and fast. I love making this when there's left over frosting from making a cake or cinnamon rolls. It's super yummy and kids love it!*

Chocolate Butter-Cream Frosting

1/2 Cup Butter
1/2 Cup Unsweetened Cocoa Powder 
2-3 Cups Powdered Sugar
1/4 Cup Milk
1 tsp. Vanilla Extract 
Combine all ingredients in a large bowl and beat with an electric mixer until frosting is creamy, 3-5 minutes. Add more powdered sugar as needed to achieve a thick but not stiff frosting that is easy to spread. Add milk to thin the frosting if it gets too thick. 

*I live this frosting recipe. I was super impressed by it. One of my friends recommended it to me. It works well when using a piping bag and tip. I had to play with some tips since I bought some and it was awesome! I enjoyed making them and will continue to do fancy stuff like this because its fun and I enjoy it waayy to much!*

No Bake Cookies

Bring to a Boil and Boil for One Minute the following:
2 Cups Sugar
1/2 Cup Butter or Margarine
1/2 Cup of Milk
Add and Stir in
1/2 C Peanut Butter
3 Cups Quick Oatmeal
5 Tablespoons Cocoa
1 Tsp Vanilla
Remove from heat and drop onto wax paper with a spoon 
Let Cool and Enjoy


*I love this recipe! Simple easy and I don't have to pull cookie sheets in and out of the oven for two to three hours when making cookies. My siblings all love this recipe and so do I. If you are allergic to peanuts then you can leave out the peanut butter and the recipe is just fine!*

Sour Cream Pancakes

2 c. all purpose flour
2 1/2 t. of baking powder
1 t. baking soda
2 t. sugar
1/4 t. salt 
2 eggs
1/2 c. sour cream
1 2/3 c. milk
2 t. vanilla
  
In a large bowl, whisk flour, baking powder, baking soda, sugar, and salt together.  In another bowl, whisk eggs until lightly beaten then add sour cream, milk, and vanilla.  Whisk until smooth.  Add flour mixture to milk/egg mixture and whisk together.  Cook in a frying pan with a little butter over medium heat, flipping when bubbles form on the uncooked side.  Repeat until batter is gone.  Serve warm with your favorite toppings.

*I really like this recipe especially when I add chocolate chips to it. Usually my mom makes pancakes from the mix and the mix doesn't even compare to these. My favorite topping on these is whipped topping or cool whip! Thanks to my mom for the picture.*



Blueberry Muffins

 1 3/4 C Flour 
1/3 C Sugar
2 Tsp Baking Powder
1 Egg Beaten
3/4 C Milk
1/4 C Cooking Oil


1. In mixing bowl combine flour, sugar, baking powder and 1/4 tsp salt 
2. Combine egg, milk and oil
3. Add egg, milk and oil mixture into flour mixture
4. Stir until moistened 
5. Fold in 3/4 cups fresh or frozen blueberries
6. Line muffin tin with paper cups or greasing the muffin tin will do
7. Fill about 2/3 way full 
8. Bake in oven at 400 Degrees for 20 minutes or until golden brown


*This recipe is really good. I'm not a huge berry muffin fan but this one is good. I put this on at request of a friend and I hope this satisfies her desire for blueberry muffins! Thanks to Lauren for the pictures!*

Cake Mix Cookies


1 package Cake Mix
¼ cup butter/margarine softened
2 T Milk
¼ cup Sugar

Mix all but sugar together. If batter is very dry add more milk. Shape into 1” balls and roll in sugar. Put on a cookie sheet and bake for 10-12 minutes at 350. 

*Cake Mix cookies, easy simple fast. Its a great recipe and easy to use. If you like sandwich cookies you can put frosting between two cookies and you have a delicious sandwich cookie!*

Cake Mix Brownies


1 cake mix (any kind will do but if you're like my mom she prefers a chocolate one)
2 Eggs
1/3 C of Oil
2 T Water
1 C of Chocolate Chips

Mix with a fork all ingredients. This will be very stiff and yes hard to spread into the pan. Smash into a greased pan and bake at 350 for 20 minutes but NO longer.

*I love this recipe! I use it when my family runs out of Brownie Mixes and only cake mixes are left. It's quick and easy. I do this a lot instead of making brownie's from scratch which sometimes takes a lot more work than just doing this. This recipe is also very good without adding the chocolate chips.*

Red and White Mostaccioli (Little Mustaches)


  • 1 pound uncooked mostaccioli or other tubular pasta
  • Alfredo Sauce (See post with this recipe from Liz)
  • 1 (26-ounce) jar meatless spaghetti sauce
  • or 3 cups homemade sauce, divided
  • 3 cups shredded mozzarella cheese, divided
1. Preheat the oven to 350 degrees.
2. Cook the pasta according to package directions; drain.
3. Meanwhile, prepare sauce of Fettuccine Alfredo (omit the pasta).
4. Spread a thin layer of spaghetti sauce in a 9 x 13-inch baking dish. Layer
half the pasta, half the Alfredo sauce, half the spaghetti sauce, and
11/2 cups of the cheese. Repeat the layering with the remaining pasta,
Alfredo sauce, spaghetti sauce, and cheese.
5. Cover with aluminum foil and bake about 30 minutes or until it is hot and
bubbly.

*I love this recipe! My Mom and I made this a while ago. Its so good and so easy. Definitely a favorite of mine and one that I think almost anyone would love. By the way if you make your own alfredo sauce from scratch its even better!*

Pretzel Maker Pretzels



1 Tablespoon yeast
1/2 cup sugar
1 1/2 cups warm water
Mix together.  Let sit until bubbly, frothy.

4 1/2 cups flour
Mix flour in.  Form into pretzels or pretzel bites.

Dip in 1/3 cup baking soda dissolved in 3 cups warm water.
Sprinkle with salt--table salt or salt crystals.

Bake 425 degrees for 8-10 minutes on greased cookie sheet.  Baste with butter as soon as they come out of the oven

Better than Anything Cake (or Heart Attack in one Piece)


1 package Betty Crocker German chocolate cake mix
Water, vegetable oil and eggs as called for on cake mix package directions
1 can (14 oz.) sweetened condensed milk
1 jar (16-17 oz.) caramel, butterscotch or fudge topping
1 container (8 oz.) frozen whipped topping, thawed (3 cups)
1 bag (8 oz.) toffee chips or bits

Hear oven to 350 degrees Fahrenheit.  Make and bake cake as directed on package for 13 X 9 inch pan.  Cool 15 minutes.  Poke top of warm cake every 1/2 inch with handle of wooden spoon.  Drizzle milk evenly over top of cake; let stand until milk has been absorbed into cake. Drizzle with caramel topping.  Run knife around sides of pan to loosen cake.  Cover and refrigerate about 2 hours or until chilled.  Spread whipped topping over top of cake.  Sprinkle with toffee chips. Store covered in refrigerator.

1 cake mix (any kind will do but if you're like my mom she prefers a chocolate one)
2 Eggs
1/3 C of Oil
2 T Water
1 C of Chocolate Chips

*I use this recipe mainly when I'm feeling lazy and don't want to make brownies from scratch. These substitute just fine. My personal favorite is a Fun Fetti Cake mix with M&M's or chocolate chips in it.*

Crepes

2 C of Flour
1/2 tsp Salt
2 Eggs
3 C of Milk

Whisk the ingredients together and cook them in a greased Crepe pan. Serve with any topping you could possibly think of that would taste good with them.

*My personal favorite toppings to put on these are Nutella and whipped Cream. So good and so easy. This is by far my favorite Crepe recipe and everyone in my family loves it!  I got this from Heidi Christensen. PS thanks to my mom for the Pic!*


Chex© Muddy Buddies

 9 C Chex Cereal or any kind of Rice/Corn/Wheat squares will do
 1 C of Semi Sweet Chocolate Chips
1/2 C of Peanut Butter
1/4 C Margarine/Butter
1 tsp. Vanilla
Powdered Sugar

Directions:
Measure the cereal and put aside
In a microwavable bowl melt chocolate chips, peanut butter and margarine for 1 minute stirring occasionally (careful chocolate burns!)
Melt until mixture can be stirred smooth
Stir in Vanilla
Pour the chocolate mixture over the cereal until evenly coated
Either cover the bowl that has the cereal in it or put the cereal in a plastic bag
Put powdered sugar in about 1/2* cup at a time
Shake until evenly coated
Refrigerate until cold
Serve and Enjoy!

*Typically when I make this I do not go with exact amounts of powdered sugar. I go by my eye and if it looks covered I call it good. I tend to make these when we're having movie nights or birthday parties because their easy and it tastes delicious!" 

My Famous Blonde Brownies

1 C of butter/margarine melted
2 1/4 C Brown Sugar
4 Eggs beaten
3 Cups of Flour
1 tsp. Salt 
1 1/2 tsp Baking Powder
1/8 tsp Baking Soda

Directions 
Preheat oven to 350 Degrees
Cream together butter and brown sugar
then add the four eggs beaten
Mix flour, Salt, Baking Powder, and Baking Soda in a separate bowl 
Pour into greased cookie sheet and spread thinly
Cover with 1 pkg chocolate chips
Bake for 20-25 minutes

Best Cocoa Applesauce Muffins Ever



¼ Cup Hershey’s Cocoa                                                                                                 ¾ Cup Sugar
¼ Cup Vegetable Oil                                                                                               ¾ tsp. Baking Soda
¾ Cup Applesauce                                                                                                           ¼ tsp. salt
1 Egg Beaten                                                                                                     
1¼ Cups Flour
                                Optional Ingredients: ¼ tsp. Cinnamon , ½ Cup chopped nuts

Directions:
In small bowl combine cocoa and oil, stir until smooth.
Add applesauce and egg; blend well
In medium bowl, combine flour, sugar, baking soda, salt and if using Cinnamon.
Stir in apple sauce mixture just until moistened (or you can add the flour mixture to the apple sauce mixture) 
Put Crumb Topping on top

Bake at 350 for 15 minutes
Makes 12 Muffins

Crumb Topping
1 T Butte r or Margarine
2 T  Cocoa
¼ Cup packed Brown Sugar
2 T Flour
Optional: ¼ Tsp. Cinnamon         

Directions:
In small microwaveable bowl, microwave 1 T butter or margarine on high for 15 seconds or until melted
Add 2 T Cocoa; blend until smooth
Stir ¼ cup packed Brown Sugar and 2 T flour
PUT ON MUFFINS BEFORE PUTTING THEM IN THE OVEN

 *I love this recipe! So easy!  I get up on Saturday Mornings and make them. Who doesn't love a warm muffin for breakfast?*

Easy Cheesecake

Ingredients:
Graham Cracker or Chocolate Pie Crust
18 oz Cream Cheese
1 C Powdered Sugar
1 C Sour Cream
1 Tsp. Vanilla
1 8 oz container of Cool Whip

Instructions
1. Beat cream cheese
2. Add sugar, sour cream and vanilla and mix
3. Add Cool Whip and beat until mixed
4. Put in crusts and let cool in the fridge

*I love this cheesecake! I have it every year for my birthday that is how obsessed with it I am! I prefer it with chocolate crust, which is my favorite personally. You can decide for yourself!*
